“Mice do not have a special appetite for cheese, and will eat it only for lack of better options; they actually favor sweet, sugary foods. The myth may have come from the fact that before the advent of refrigeration, cheese was usually stored outside and was therefore an easy food for mice to reach.”
Do mice eat cheese? Is that a natural thing they evolved to eat? Would be weird because cheese is man-made right?
Cheese isn’t good for mice. Dairy products in general aren’t good for most animals.
Mice will eat mostly anything if given the chance though

Most adult humans can’t eat cheese. Lactose intolerance and all.
Cheese has low levels of lactose, on account of, you know, the bacteria eating it, which is what makes it cheese.
